- 4 bell peppers, cleaned and sliced lengthwise (pick different colors)
- 1/4 c pitted oil-cured black olives
- 1/4 c chopped oil-packed sun-dried tomatoes
- 1 -2 tb extra-virgin olive oil
- 1 - 2 tb balsamic vinegar
- 2 tb of feta cheese
- Dash of salt
- Fresh ground black pepper
Directions
- Grill peppers on med-high, until soft and charred in spots, about 5 minutes per side. Turn once
- Cool pepers and then cube
- Add olives, vinegar, sun-dried tomatoes, oil, cheese, black pepper and salt
