Grilled Pepper salad


 
Ingredients:
  • 4 bell peppers, cleaned and sliced lengthwise (pick different colors)
  • 1/4 c pitted oil-cured black olives
  • 1/4 c chopped oil-packed sun-dried tomatoes
  • 1 -2 tb extra-virgin olive oil
  • 1 - 2 tb  balsamic vinegar
  • 2 tb of feta cheese
  • Dash of salt
  • Fresh ground black pepper
 
Directions
  1. Grill peppers on med-high, until soft and charred in spots, about 5 minutes per side. Turn once
  2. Cool pepers and then cube
  3. Add olives, vinegar, sun-dried tomatoes, oil, cheese, black pepper and salt
