Cut one rack of baby back ribs in half. Use knife to make thin slices in membrane on fatty side of rack. Place in roasting pan fatty side up. Garnish with salt, pepper and garlic powder. Flip to meaty side and do the same. Then sprinkle with liquid mesquite smoke flavoring. Then sprinkle with the juice of one lime. Then drizzle with asian oyster sauce enough to lightly cover most of the ribs. Then drizzle with Tony Roma's Carolina BBQ sauce. Cover with tin foil. Poke numerous small holes in tin foil. Preheat oven to 350. Place pan on middle shelf. Bake for 45 mins. Then turn heat down to 300 degrees and back for another 2 hours. Add more Tony Roma sauce to taste just before serving.
Everyone who has tried my ribs raves about them. Can provide references. lol

4. Apply rub to ribs on all sides.
5. Lay ribs on two layers of foil shiny side of the foil facing out and meaty side of the rib face down.
6. Lay two layers of foil on top of ribs and roll and crimp edges tightly, edges facing up to seal them.
7. Place the foil-wrapped ribs on a baking sheet and bake for 2 – 2 1/2 hours or until meat is starting to shrink away from the ends of the bone.
8. Remove from oven and pull ribs out of the foil packages.
9. Heat broiler.
10. Cut ribs into serving sized portions of 2 or 3 ribs each.
11. Arrange the ribs on a broiler pan, bony side up.
12. Brush on sauce.
13. Broil under broiler for 1 or 2 minutes until sauce is cooked on and bubbly.
14. Turn ribs over, brush on the sauce and broil that side for 1 or 2 minutes until sauce is cooked on and bubbly.

Take out and serve with corn on the cob! Absolutely finger lickin’ good!

Hey Diane! My favorite rib recipe is something I created working on a small hog farm several years ago. We ate a lot of ribs there. Let me know what you think!

INGREDIENTS:
4 racks pork spareribs
1 1/2 cups white sugar
1/4 cup salt
2 1/2 tablespoons black pepper
3 tablespoons paprika
1 teaspoon cayenne pepper
2 tablespoons garlic powder
1/2 cup chopped onion
4 cups ketchup
3 cups hot water
4 tablespoons brown sugar
pinch cayenne pepper
salt and pepper to taste
1 cup soaked wood chips

DIRECTIONS:
Trim away any excess fat from ribs. In a medium bowl, stir together the sugar, salt, black pepper, paprika, the 1 teaspoon of the cayenne pepper, and garlic powder. Rub spice mix all over the ribs. Place the ribs in two 10x15 inch roasting pans, piling two racks of ribs per pan. Cover, and refrigerate for 8 or more hours.

Preheat oven to 275 degrees F (135 degrees C). Bake uncovered for 3-4 hours, or until the ribs are tender and just about falling apart fall apart.

For the bbq sauce, remove 4-5 tablespoons of drippings from the roasting pans, and place in a skillet over medium heat. Cook onion in pan drippings until lightly browned. Stir in ketchup, and heat for 3 to 4 more minutes, stirring constantly. Next, mix in water and brown sugar, and season to taste with cayenne pepper, salt, and pepper. Reduce heat to low, cover, and simmer for 1 hour, adding water if it gets too thick.

Preheat grill for low heat. When grill is ready, add the soaked wood chips to the coals or to the smoker box of a gas grill. Spray grill's grate with a coat of cooking spray. Place ribs on the grill but do not overcrowd. Cook for 20 minutes, turning occasionally. Baste ribs with sauce during the last 10 minutes of grilling only.

Enjoy!
